This week I decided to document the salads I ate for lunch during the weekdays. All of these salads use relatively common ingredients. I don’t often use salad dressings on my salads, but when I do I make them from scratch using nuts as my base. Raw nuts are a great addition to salads. I feel like my salads are naked when they don’t contain avocado or nuts. Enjoy!

Basic Salad 

  • Spinach
  • Baby chard
  • Cherry tomatoes
  • Orange Bell Peppers
  • Cucumbers
  • Avocado
  • Black Beans
  • Slivered Almonds
  • Raw Walnuts

Avocado & Mango Salad with Banana-Walnut Dressing

  • Butter lettuce
  • Mango
  • Avocado
  • Hemp seeds

Dressing:

Blend the following until creamy

  • 1 banana
  • 1/4 cup raw walnuts
  • 1/4 cup almond, plus more to reach desired consistency

Mexican Salad with Avocado-Lime Dressing

  • Butter lettuce
  • Black beans
  • Onion
  • Corn
  • Red & green bell peppers
  • Cherry tomatoes
  • Avocado

Dressing:

Blend the following until creamy

  • 1/2 avocado
  • Handful of almonds
  • Juice of one lime
  • Handful of cilantro
  • Salt to taste
  • Cumin to taste

  • Spring lettuce mix
  • Cooked Lentils
  • Cucumbers
  • Cherry tomatoes
  • Radishes
  • Avocado
  • Walnuts

  • Butter Lettuce
  • Spring mix
  • Cherry tomatoes
  • Steamed brussel sprouts
  • Avocado
  • Black beans (They are in there somewhere!)
  • Cooked brown rice
