Header Pomme Granate 3 - 1200x300

Ingredients:

1 red bell pepper, coarsely chopped

1 yellow bell pepper, coarsely chopped

1 can black beans (15oz, drained)

1 medium cucumber, diced

1 cup cooked quinoa

1/4 cilantro, minced

1/3 cup red onion

2 cups mango, diced (I used thawed frozen mangoes)

1 T Jalapeno, minced

1/4 cup fresh lime juice

 

Directions: Combine all ingredients in a large bowl and enjoy.
