I don’t usually stray from my usual breakfast. I love eating a big bowl of blueberries, apples, oats, and soy milk. However, I have an excess of lemon cucumbers that I need to use up right now, so I decided to incorporate them into a breakfast salad this morning. This salad is quick and simple and best of all, it’s super healthy.

  • 1 small apple
  • 1 small banana
  • 1 lemon cucumber use 1/2 cup regular cucumber if you don't have a lemon cucumber
  • 1/2 cup mango
  • 2 tbsp tahini
  • 1 tbsp hemp seeds


  1. Slice banana, dice apples, cucumber, and mango then combine in a serving bowl. Drizzle tahini on top and sprinkle hemp seeds. A healthy and delicious breakfast is that easy!
