For the Fruit Salad:
- Cooked quinoa
- Fruit (I used an apple, orange, and blueberries)
- one banana
- 1/2 cup raw walnuts
- 1/2 non-dairy milk (I used cashew milk)
This salad is really easy and very versatile. All I did was scooped some quinoa, which was leftover from dinner the previous night, onto a plate, cut up some fruit, and added the dressing. So easy!
To make the dressing, puree all the ingredients in a blender. Add a little more milk if you prefer it less creamy. Mix the dressing in with whatever fruit you have on hand, and add healthy scoop of quinoa. Be careful, the dressing is addictive!
