• Sprouted grain bread
  • 1 tomato, sliced
  • 1 avocado, sliced
  • Kale leaves

For the Pesto:

  • ½ cup pistachios
  • ½ cup walnuts
  • ½ cup packed fresh basil leaves
  • 1 clove of garlic
  • 3-4 Tablespoons lemon juice
  • 1 teaspoon grapeseed (or olive) oil

Combine nuts in a small food processor or chopper and pulse until crumbly. Add basil, garlic, grapeseed oil and process until combined. Add Lemon juice one tablespoon at a time until desired consistency is obtained.


Spread Pesto on a slice of bread. Top with tomato, avocado, kale and any other veggies you please. Top with another slice of bread and grill on an indoor grill, griddle, or panini press until desired toastiness is achieved. IMG_0917IMG_0898IMG_0919
