• 4 pita pockets
  • 1 cup favorite pizza sauce (make your own)
  • ½ red onion
  • 1 cup cauliflower
  • ½ red bell pepper
  • ½ green bell pepper
  • 10 grape tomatoes

To roast vegetables:

  • Preheat oven to 450°
  • Cut all onions, bell peppers, and cauliflower into large chunks that are similar in size.  Cut grape tomatoes in half
  • Toss vegetables in oil and sprinkle on some salt
  • Place on a cookie sheet ensuring  that no vegetables are touching each other.
  • Roast in oven for about 30-40 minutes. Vegetables should be slightly blackened

Assemble pizzas by spreading pizza sauce over pita pockets. Top with roasted vegetables. Bake at 350° for about 10 minutes, or until pizza is heated through. IMG_0671IMG_0669
